Black mustard seeds are one of the quintessential spices used in Indian cooking.
Black mustard seeds are tiny, strong flavored seeds used most commonly in Indian cooking. They are the most pungent of all mustard seeds. The seeds are the same size as common yellow mustard seeds but with a more intense flavor that tastes more “mustardy”. Black seeds are particularly pungent and hot, but have to be ground for their true flavors to awaken.
A great culinary trick though, is to heat or toast the seeds in hot oil or ghee before using in your recipes. Toasting your seed releases the nutty flavors with none of the pungency.
